Opening a new restaurant Clive 3-4-09  
I have no idea what it would take to open a restaurant, but it seems (based on other posts in this forum) that there is not only room for more, but room for unique restaurants as well.

Can someone just give me their thoughts on what type of restaurant they would find appealing, and in what price range?

Greek would be nice. And Chinese would be good as there are not any GOOD Chinese restaurants in Xalapa or Coatepec. Some claim to have the best Italian but I find them lacking. Spainish restaurants do not provide the original spices and taste for Paella. But they claim to. I know a man who owns a restaurant in Coatepec. I will ask him if he has any ideas.
Also be advised there is a different tax structure here in Mex. which is getting more strict.
